Holiday Cookie Workshop: Royal Icing and Bakery Black & White Cookies

Step into a sweet winter wonderland in this joyful holiday cookie workshop. Back by popular demand is Tess’ Holiday Cookie Bake & Decorate class, where participants learn the foundations of decorating cookies with Royal Icing—now paired with a bakery-style favorite called Black-and-White Cookies—half-way between a cake and a cookie, and covered with glossy chocolate and vanilla ganache-style icing on top. Participants will bake their own sugar cookies ahead of time so they are ready to decorate at the start of class.
A PDF with two of the instructor’s personal sugar cookie recipes—one soft and chewy, one crisp—along with a full list of ingredients and supplies for Royal Icing will be provided roughly 5 days before class to allow time for shopping and baking. Choose to bake one or the other or both using cookie festive cutters of choice. The packet will also include supplies needed to create the bakery-style Black & White cookies that we will be baking together during class. Together we will bake the gourmet Black & White cookies, create Royal Icing with the proper consistency, and learn the foundations of decorating with it on our pre-made sugar cookies. No fancy equipment needed.
This class will take place on Zoom. Participants will receive instructions on how to access the class prior to it starting.
Note: Instructors recipes are copyrighted and are only shared with those who register for this class. Refunds CANNOT be issued once the recipes/class documents are shared. One registration fee for this on-line Virtual class can include participants from the same household only. If children are participating, adult supervision is required.
Tess Georgakopoulos
Instructor
Tess Georgakopoulos has been cooking for well over 40 years since she was roughly 6 years old. Born into a Greek family, the art of cooking traditional meals using ones senses rather than recipes and measurements was passed on from one generation to the next. Her father was also a trained chef who brought the magic of food to life in another form on the weekends as they cooked elaborate family meals together. Food prepared from the heart, with ones own hands and creativity was, and continues to be an expression of love in her home. As a skilled home cook and baker, Tess enjoys creating original recipes for her family and friends. Sweet, savory, or doughy, she enjoys experimenting and creating in the kitchen daily.
Pressure-cooking with a stovetop cooker has been a part of her culinary repertoire for over 25 years. Tess is creating new recipes and reinventing traditional ones using the Instant Pot, which is taking her pressure-cooking to another level! She has been teaching both in-person and on-line cooking classes through community education for a number of years having worked with numerous public school districts in and around the Twin Cities.
